Waldorf Chicken Salad

Chicken Waldorf salad is a lightened-up, modernized version of a classic chicken salad. I love this salad because it is a protein-packed, low-carb lunch and elegant enough to serve to guests. Eat it on top of a bed of lettuce or with whole grain toast or pita.

This yummy lunch reminds me of fancy ladies lunching at the country club.  Maybe it’s because one of my first jobs was waitressing at a country club in Lansing, Michigan.  To help me remember orders I would guess what each person was ordering in my head.  I got pretty good at it and could easily place which member had waldorf chicken salad croissant sandwich written on their their face.  Flash forward I’m now a lady who lunches!  Maybe not at a country club, or even very often, and usually when I’m making lunch for myself ;).  Even so, I love lunching with this chicken salad, especially along with salad greens.  Today’s recipe is a lightened up, modernized version of a classic chicken salad.

3 reasons why to love Waldorf Chicken Salad –

  • high in protein, low in carbs
  • easy to put together with simple ingredients
  • versatile – serve it 3 ways;  alone, on top of a bed of lettuce (my preferred method), or in a whole wheat pita pocket

Make a big batch of Waldorf Chicken Salad and enjoy it all week!

I appreciate pre-cooked chicken like Trader Joe’s “Just Chicken”.  It’s plain, unseasoned and perfect to use in recipes.

Just Chicken

This salad has crunch and texture.  It is a fun combination of flavors.  The sweetness of the apples, the savory of the chicken and walnuts, and the sour of the pomegranate work well together.

A trick of the trade is to swap heaps of mayo with dabs of non-fat, plain yogurt.  I do include a couple of spoons of light Miracle Whip for the taste.
